EGGLESS CHOCOLATE CAKE-VEGAN CHOCOLATE CAKE

Eggless Chocolate Cake

Ingredients

  1. All purpose flour
    1.5 cups
  2. Cocoa powder
    3 Tbsp
  3. Baking Soda
    1 tsp
  4. Salt
    1 Pinch
  5. Sugar
    1 Cup
  6. Oil
    1/4 Cup
  7. Water
    1 cup
  8. Vanilla essence
    1/2 tbsp
  9. White vinegar or Lemon juice
    1 tbsp
  10. Instant coffee powder
    1/4 to Β½ tsp (optional)

Directions

  • Preheat oven to 180 Deg C.Line baking pan ( 9″ x 9″ ) with parchment paper,or grease it with oil and lightly dust with flour.
  • Whisk together all purpose flour,cocoa powder,baking soda and salt in a large mixing bowl.Keep aside.
  • In a mixing bowl ,combine together sugar,oil,water,vanilla essence,white vinegar and instant coffee powder( if using) until sugar is completely dissolved.
  • Add this to the dry ingredients and mix until combined.
  • Pour the batter into the prepared tray and bake for about 35 to 40 minutes or until a skewer inserted into the cake comes out clean.
  • Allow it to cool completely and cut into squares.(Or  cut the cake horizontally into two using a serrated knife,spread chocolate ganache between the layers and on top of the cake.Sprinkle grated chocolate on top,if desired.)
CHOCOLATE GANACHE

Ingredients

  1. Chopped Dark chocolate- 1/2 cup
  2. Coconut Cream( for vegan option) or use regular cream- 1/2 cup

Method

  • In a sauce pan bring cream to just under a boil.
  • Transfer this into a bowl,and add the chopped chocolate.Mix well until smooth.
  • Allow this to cool completely and  refrigerate  for 1 hour or until  required.
Note :You can also use whole wheat flour and brown sugar instead of all purpose flour and white sugar for a healthier cake,as i did.

    I never made eggless cake and this one looks so moist. I always feel scared that eggless cake would not rise enough! And I also see that you need no extra special ingredient for this cake! This looks very promising.

    Hi,
    Tried this cake today… was super yummy…. Thanks a lot…. just one problem… can u specify the baking tray measurements with corresponding ingredients…as my cake did not rise till the brim.

      Yes!!you can use regular cream for the ganache…for the cake in the picture i have used regular cream….{coconut cream will also taste great,in case if you want to try it}

    Just wanted to thank you for this absolutely wonderful recipe.

    I used this recipe to bake a double layer cake for my daughters birthday as well as some cupcakes as gifts for her friends.

    everyone loved the cakes and I had so many compliments on how tasty the sponge was. Most people couldn't believe that I hadn't used any eggs considering how well the cake rose and how moist the sponge was.

    Its definitely one of the easiest recipes I have used and worked exactly as promised!

    Do you think this cake would stand up to being cut into a shape for a specialty birthday cake?

      I think it should work fine…but I haven't tried it yet!!
      If you wish to give it a try ,do refrigerate the cake for an hour or so ,,or until it is a bit firm,so that you can shape the cake easily,without breaking it…

    Planning to use whole wheat instead of all purpose flour….please tell that quantity of oil and soda needs to be kept same and whether the cake will rise and be equally moist?

      Yes !!you can use whole wheat flour for the cake(the one in the pic is a whole wheat flour cake),the rest of the ingredients are the same as in the above recipe.Make sure that u do not over mix the batter.( mix GENTLY,just until combined).
      The whole wheat flour cake did have a nice texture and was moist too.( if you use all purpose flour ,the texture of the cake will be slightly different and a bit more moist)

    I want to make a different version.. I dont want to use cocoa powder.. can you please tell me what should be the ingridents and measurements.. can I replace cocoa powder with all purpose flour

      Yes!you can try many variations with this recipe… you can actually replace the cocoa powder with all purpose flour if you want to try a different flvr cake.Keep all other ingredients the same.you can also replace water with milk or even orange juice….Add a bit of lemon or orange zest,if desired…the options are endless..

    Thank you so much for the recipe. I do not bake regularly. Mainly because it never comes out good. But I have tried 3 or 4 Chocolate cake recipes. But this is the best of all. We really loved the cake.

    great recipe! I always hesitate to bake any kind of cake as i am not a good baker and i'm in love with vegan cakes rather than ordinary ones with eggs and butter. However, I made this vegan cake with your recipe and it turned out very good except for being a bit plain as I did not add much honey. But i would serve it with banana sauce so no problems. Thank you for sharing! I will try other recipes of yours!

      yes ..it works well with fondant….I usually use chocolate ganache under the fondant layer.
